A couple of other projects we are working on for the future is an Absinthe and a Gin. The goal here is to produce products within the categories yet still unique. Using as many Oregon botanicals as possible.
A lemon rum or vodka is in the near future! We are getting some beautiful Meyers lemons from Greg and Marcy Stevens at their Dairyville Acres farm in Dairyville CA. We are going to be working on a lemon spirit of some sort.... Stay tuned!
We have put up a rum infused with the Quince fruit. It has a light flavor. I am thinking of combining it with a rose petal or rose hip infusion. Probably a release for next year....
Look for these new products to show up in our tasting rooms this year! Ask for them to get them into your local liquor store.
